If there is a viral take on pasta, you know I have to join in. This is my version of the dish that had markets sold out of feta for weeks in early 2021! My secret is to whip the feta with a little cream to make a silky smooth sauce. Don’t tell anyone, but I think my version is better than the original. Shhhhhhhhh.

These stuffed pasta shells are rich in flavor, just like you are. The filling is equal parts ricotta and mozzarella, which by my calculations is perfection. Fill the shells to the brim with the cheese filling, then top with a simple marinara sauce before baking.

The sauce of this truly delightful pasta requires absolutely no cooking. Simply combine ricotta with a little pasta water, then add fresh lemon juice and zest. Finish the dish with a scraaanchhhh of black pepper and a generous sprinkle of pecorino.

#4 The Assassin’s Spaghetti

Legend has it, this infamous pasta dish was born when a drunk cook was overloading his tomato sauce with too much garlic and chili peppers. Then, when distracted by a beautiful woman passing by he mistakenly added his pasta directly to the sauce without cooking it first. To save the dish he made a tomato paste broth and cooked the pasta directly in the sauce while adding the tomato broth little by little. The end result was this spicy and irresistible number, just like you are.

Nonna says to eat your peas, which is a very easy request when in the form of this sweet and creamy pasta dish. After making a bright pea puree, you cook the pasta directly in the pea mixture, adding water as needed until al dente. Egg mixed with pecorino is added in the last minute of cooking to bring flavor and richness. You’ll never think of peas the same again!
